  • 1 pound ground beef (80/20 recommended)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice, rinsed
  • 2 cups low-sodium beef broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas and carrots, thawed
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 3-4 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  2. Add ground beef to the skillet. Break it up and cook until browned, about 5-7 minutes. Drain excess fat, leaving about 1 tablespoon.
  3. Push beef and onions to the sides of the pan. Add rinsed rice to the center and toast for 1-2 minutes, stirring occasionally (optional but recommended).
  4. Pour in beef broth, diced tomatoes with juices, and Worcestershire sauce. Add smoked paprika, oregano, garlic powder, salt, and pepper. Stir well, scraping up browned bits from the bottom.
  5. Bring to a boil, then reduce heat to low. Cover with a tight-fitting lid and simmer for 18-20 minutes, without lifting the lid, until rice is tender and liquid is absorbed.
  6. Remove from heat. Fold in frozen peas and carrots. Cover and let sit off heat for 2-3 minutes to warm vegetables.
  7. Fluff with a fork. Taste and adjust seasoning. Garnish with fresh parsley and serve hot.

Notes

For best texture, use long-grain rice like jasmine or basmati. Rinsing rice is essential to prevent gumminess. Do not lift the lid during simmering. If rice is not tender after 20 minutes, add 2-3 tablespoons water, re-cover, and cook 2-3 more minutes. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
