  • 4 ounces cream cheese, softened to room temperature

  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder

Instructions

  1. Activate the yeast: Pour warm water into a large mixing bowl. Sprinkle yeast on top and add brown sugar. Stir gently and let sit for 5 minutes until foamy and bubbly.
  2. Make the dough: Add melted butter and salt to the yeast mixture. Stir in flour one cup at a time until a shaggy dough forms. Turn out onto a floured surface and knead for 6-8 minutes until smooth and elastic.
  3. First rise: Lightly grease the bowl, place dough inside, turn to coat. Cover with a towel and let rise in a warm spot for 1 hour until doubled in size.
  4. Shape the pretzel bites: Punch down dough and divide into 4 equal pieces. Roll each into a 1-inch thick rope, then cut into 1-inch pieces. Place on a parchment-lined baking sheet without touching.
  5. Baking soda bath: Bring 10 cups of water to a rolling boil in a large pot. Carefully add baking soda (it will bubble up). Reduce to a gentle simmer. Boil bites in batches of 8-10 for 30 seconds per side. Remove with a slotted spoon and return to baking sheet.
  6. Egg wash and salt: Preheat oven to 425°F (220°C). Brush each bite with egg wash and sprinkle generously with coarse salt.
