  • 4 salmon fillets (about 6 ounces each)
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger, grated
  • Salt and black pepper to taste
  • Optional garnishes: sliced green onions, sesame seeds, fresh cilantro or parsley

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the center of the oven.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, sesame oil, and grated ginger until well combined.
  3. Tear off four large sheets of heavy-duty aluminum foil, each about 12 to 14 inches long.
  4. Pat salmon fillets dry with paper towels and season both sides lightly with salt and black pepper. Place each fillet in the center of a foil sheet, skin-side down if using skin-on fillets.
  5. Spoon about 2 to 3 tablespoons of the glaze over each fillet, coating the top and sides. Reserve a little glaze for brushing on after cooking if desired.
  6. Bring the two long sides of the foil together over the salmon and fold over a few times to create a tight seal. Fold up the short ends, crimping securely to form a neat parcel.
  7. Place the foil packets on a rimmed baking sheet in a single layer with some space between each.
  8. Bake for 12 to 15 minutes, depending on thickness. Salmon is done when it flakes easily with a fork and internal temperature reaches 145°F (63°C).
  9. Carefully open the packets using tongs and oven mitts. If needed, return unwrapped to the oven for a minute or two for a caramelized top.
  10. Brush with reserved glaze if desired, garnish with green onions, sesame seeds, and fresh herbs. Serve immediately.

Notes

Pat salmon dry for better glaze adhesion. Start checking doneness at 12 minutes to avoid overcooking. Use room temperature ingredients for smoother blending. Double the glaze if you like extra sauce. Let salmon rest for a minute after opening packets.
