Easy Kid-Approved Crockpot Taco Soup with Ranch

A simple, forgiving, and delicious taco soup made in the slow cooker with ranch seasoning. Perfect for busy weeknights, it pleases both picky toddlers and skeptical adults.

Ingredients

  • 1 lb ground beef
  • 1 packet (1 oz) ranch seasoning mix
  • 1 packet (1 oz) taco seasoning mix
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) Rotel tomatoes with green chilies
  • 1 can (14.5 oz) diced tomatoes
  • 3 cups beef broth
  • Optional toppings: shredded cheddar cheese, sour cream, crushed tortilla chips, sliced avocado, fresh cilantro, lime juice

Instructions

  1. Brown the ground beef in a skillet over medium-high heat until no longer pink, about 5-7 minutes.
  2. Transfer the browned beef to a slow cooker. Add the drained black beans, pinto beans, corn, Rotel tomatoes, diced tomatoes, and beef broth. Sprinkle the ranch seasoning and taco seasoning over the top. Stir well to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Stir the soup and check consistency. If too thick, add a little extra broth or water. If too thin, cook uncovered for 15-20 minutes.
  5. Taste and adjust seasoning if needed.
  6. Ladle into bowls and serve with desired toppings.

Notes

For best flavor, brown the meat first and add seasoning packets to the liquid, not the raw meat. The soup is even better the next day. To reduce sodium, use no-salt-added canned goods and low-sodium broth.
