Easy Loaded Buffalo Chicken Dip for Game Day

This loaded buffalo chicken dip is creamy, spicy, and utterly decadent, perfect for game day or any gathering. It features tender shredded chicken, a tangy buffalo sauce base, and a bubbly, golden cheese topping.

  • 16 oz (450g) cream cheese, softened to room temperature
  • 1 cup (240ml) Frank’s RedHot Original Cayenne Pepper Sauce
  • 1/2 cup (120ml) ranch dressing
  • 1/2 cup (120ml) sour cream
  • 3 cups (about 450g) cooked, shredded chicken
  • 1 tablespoon (15ml) unsalted butter, melted
  • 2 cups (200g) shredded sharp cheddar cheese, divided (1 1/2 cups for dip, 1/2 cup for topping)
  • 1 cup (100g) shredded mozzarella cheese, divided (3/4 cup for dip, 1/4 cup for topping)
  • 1/4 cup (25g) crumbled blue cheese (optional)
  • 2 tablespoons (8g) chopped fresh chives or green onions (optional)
  • 1/2 cup (50g) crushed tortilla chips or panko breadcrumbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the softened cream cheese, Frank’s RedHot sauce, ranch dressing, and sour cream. Beat with a hand mixer on low speed (or whisk) until completely smooth and well-combined.
  3. Add the shredded chicken, melted butter, 1 1/2 cups of the shredded cheddar, and 3/4 cup of the shredded mozzarella to the bowl. Stir with a rubber spatula until the chicken is evenly coated and the cheese is distributed.
  4. Transfer the mixture to the prepared baking dish and spread it into an even layer.
  5. Sprinkle the remaining 1/2 cup of cheddar and 1/4 cup of mozzarella evenly over the top. If using, add the crushed tortilla chips or panko breadcrumbs and crumbled blue cheese.
  6. Bake for 20-25 minutes, until the dip is hot and bubbly and the cheese on top is melted and lightly golden. For a darker top, broil for 1-2 minutes, watching closely.
  7. Remove from the oven and let rest for 5 minutes. Sprinkle with fresh chives or green onions right before serving.
  8. Serve hot with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

For best results, use full-fat cream cheese and sour cream. Let cream cheese soften at room temperature for 30-60 minutes. To make ahead, assemble the dip without the final cheese topping, cover, and refrigerate up to 24 hours. Let sit at room temperature for 20 minutes before adding cheese and baking, adding 5-10 minutes to bake time. Not recommended for freezing.
