  • 1/2 cup breadcrumbs (plain or Italian-style)
  • 1 large egg, lightly beaten
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk
  • 1 can (13.8 ounces) refrigerated pizza dough
  • 2 tablespoons unsalted butter, melted
  • 1 clove garlic, minced (for brushing)
  • 1 tablespoon dried parsley (optional)
  • 2 tablespoons cream cheese, softened
  • 1216 black olive slices
  • 1/2 cup marinara sauce, for dipping

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, egg, Parmesan, minced garlic, oregano, salt, pepper, and milk. Mix with hands until just combined.
  3. Shape mixture into 12-16 meatballs, about 1.5 inches in diameter. Place on prepared baking sheet, spacing 2 inches apart.
  4. Bake meatballs for 12 minutes. They should be browned outside but not fully cooked through (internal temp ~140°F). Remove and let cool 5 minutes.
  5. Roll out pizza dough on a lightly floured surface. Cut into thin strips, about 1/2 inch wide and 6-8 inches long.
  6. Wrap 2-3 dough strips around each meatball, leaving a small gap for eyes. Press ends to seal.
  7. Mix melted butter with minced garlic and dried parsley. Brush over dough strips.
  8. Return wrapped meatballs to oven and bake 10-12 minutes until dough is golden brown and meatballs reach 165°F (74°C).
  9. Let cool 5 minutes. Place small dollops of cream cheese on exposed meatball area, then press an olive slice onto each dollop for eyes.
  10. Serve warm with marinara sauce for dipping.

Notes

Let meatballs cool before wrapping to prevent soggy dough. For best results, use a meat thermometer to ensure doneness without overcooking. Dough strips should be thin (1/2 inch) for even baking.
