Instructions

  2. Prep the Peaches (5 minutes): Rinse and thinly slice 3-4 ripe peaches. Toss them gently with 1 tablespoon fresh lemon juice to prevent browning and add brightness. Set aside.
  3. Prepare the Base (5 minutes): Crush about 12 graham crackers into coarse crumbs, then mix with 3 tablespoons melted unsalted butter until evenly coated. Press this mixture into the bottom of an 8×8-inch glass dish to form a firm base layer.
  4. Layer the Cake (10 minutes): Spread half of the cheesecake filling evenly over the graham cracker base. Arrange a layer of peach slices on top, overlapping slightly. Add another layer of cream cheese filling, smoothing it out, then top with the remaining peaches. Finish with a crumble of graham crackers or a few toasted almonds if desired.
