  • 1 1/2 cups old-fashioned rolled oats
  • 1/2 cup mini chocolate chips
  • 1/4 cup ground flaxseed
  • 1/4 cup protein powder (vanilla or unflavored)
  • Pinch of sea salt

Instructions

  1. In a large mixing bowl, combine 1 cup creamy peanut butter, 1/3 cup honey, and 1 teaspoon vanilla extract. Stir until smooth and well combined.
  2. Add 1 1/2 cups rolled oats, 1/2 cup mini chocolate chips, 1/4 cup ground flaxseed, 1/4 cup protein powder, and a pinch of sea salt to the bowl. Stir until no dry patches remain.
  3. For easiest rolling, chill the mixture in the fridge for 10-15 minutes.
  4. Line a baking sheet or large plate with parchment paper. Using a cookie scoop or tablespoon, scoop out portions and roll into smooth balls (about 18-20 bites).
  5. Place the rolled bites on the prepared baking sheet and refrigerate for at least 30 minutes to set.

Notes

For best texture, use room temperature peanut butter. If mixture is too sticky, add more oats or protein powder. If too dry, add more honey or peanut butter. Chilling the mixture before rolling makes it less sticky. These bites taste even better after a day or two in the fridge as flavors meld.
