Easy One-Pan Garlic Butter Chicken Recipe with Zucchini and Cherry Tomatoes for Perfect Dinner

A comforting and easy one-pan garlic butter chicken with juicy chicken thighs, tender zucchini, and roasted cherry tomatoes, perfect for a quick and delicious dinner.

  • 4 boneless, skin-on chicken thighs (about 1.5 pounds / 680 grams)
  • 4 tablespoons (60 grams) unsalted butter, softened
  • 45 garlic cloves, minced
  • 2 medium zucchinis, sliced into half-moons
  • 1 pint (about 300 grams) cherry tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels. Season both sides generously with salt, pepper, and Italian seasoning.
  3. Heat a large oven-safe skillet over medium-high heat and add olive oil. When shimmering, add the chicken thighs skin-side down. Sear for 5-7 minutes without moving until the skin is golden brown and crisp.
  4. Flip the chicken thighs and cook for another 3-4 minutes. The chicken will not be fully cooked yet.
  5. Push the chicken to one side of the pan. Add the softened butter and minced garlic to the empty side. Stir gently to melt the butter and release the garlic aroma, about 1 minute. Be careful not to burn the garlic.
  6. Add the zucchini and cherry tomatoes to the garlic butter. Toss to coat and season with a pinch more salt and pepper. Spread the veggies evenly around the chicken.
  7. Transfer the skillet to the preheated oven and roast for 15-20 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the veggies are tender but not mushy. The tomatoes should start to burst and caramelize.
  8. Remove the skillet from the oven carefully. Squeeze fresh lemon juice over everything and sprinkle with chopped parsley.
  9. Serve immediately, spooning some of the garlicky pan juices over the chicken and veggies.

Notes

Dry the chicken skin thoroughly before searing to get crispy skin. Stir garlic constantly when melting butter to prevent burning. Do not overcrowd the pan with veggies to avoid steaming. Use bone-in, skin-on thighs for best flavor and moisture. If chicken skin crisps too fast, lower heat slightly while searing.
