  • ½ cup (120g) canned pumpkin puree (100% pumpkin, not pie filling)
  • 1 cup (240ml) unsweetened almond milk (or full-fat canned coconut milk for extra creaminess)
  • 3 tablespoons (45ml) pure maple syrup
  • 1½ teaspoons (3g) pumpkin pie spice (or 1 tsp cinnamon, ½ tsp ginger, ¼ tsp nutmeg, pinch cloves)
  • 1 teaspoon (5ml) pure vanilla extract
  • Pinch of fine sea salt
  • Optional toppings: Greek yogurt, chopped pecans, toasted coconut flakes, extra maple syrup, whipped coconut cream

Instructions

  1. In a medium mixing bowl, combine 1 cup milk, ½ cup pumpkin puree, 3 tablespoons maple syrup, 1 teaspoon vanilla extract, and a pinch of sea salt. Whisk until smooth and fully incorporated.
  2. Sprinkle in 1½ teaspoons pumpkin pie spice and whisk again until evenly distributed.
  3. Slowly pour in ¼ cup chia seeds while whisking constantly to prevent clumps. Whisk vigorously for about 30 seconds.
  4. Let the mixture rest for 5 minutes, then whisk again to break up any clumps that formed.
  5. Divide the mixture evenly into 2-4 jars or airtight containers.
  6. Refrigerate for at least 4 hours, preferably overnight (8 hours for best results).
  7. Before serving, stir the pudding. If too thick, add a splash of milk; if too thin, let sit another hour.
  8. Add desired toppings and serve cold, or let sit at room temperature for 10 minutes if preferred.

Notes

Use room-temperature milk for even hydration. Shake canned coconut milk well before measuring. Do not use pumpkin pie filling. The double-whisk method prevents clumps. Pudding keeps up to 5 days in the fridge; flavors improve after a day or two. Do not freeze.
