  • 1 cup (240 ml) canned pumpkin puree (not pumpkin pie filling)
  • 3 large eggs, room temperature
  • 1 cup (240 ml) whole milk or dairy-free alternative
  • 1/4 cup (50 g) packed brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 teaspoon vanilla extract
  • 4 ounces (113 g) cream cheese, softened
  • 3/4 cup (90 g) powdered sugar
  • 2 tablespoons (30 ml) maple syrup
  • 1 tablespoon melted butter (optional for brushing)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Open the cinnamon roll cans and cut each roll into quarters (about 32 pieces total). Spread the pieces evenly in the baking dish to form a single layer.
  3. In a mixing bowl, whisk together pumpkin puree, eggs, milk, brown sugar, ground cinnamon, nutmeg, and vanilla extract until smooth and well combined.
  4. Slowly pour the pumpkin custard mixture over the cinnamon rolls, making sure to coat all pieces evenly. Press down lightly with a spatula to help the rolls soak up the custard.
  5. Optional: Brush the top with melted butter for a golden finish.
  6. Bake the casserole for 35–40 minutes, or until the custard is set and the top is golden brown. The center should be firm but still moist.
  7. While baking, beat softened cream cheese with powdered sugar and maple syrup until smooth and creamy using an electric mixer or whisk.
  8. When the casserole is done, let it cool for about 10 minutes. Then either drizzle the maple cream cheese glaze over the warm casserole or spread it gently on top and bake for an additional 5 minutes for a melded finish.
  9. Cut into squares and serve warm for the best gooey texture.

Notes

Use room temperature eggs and milk for smooth custard. Let custard soak into rolls for 5 minutes before baking if possible. Watch baking time closely to avoid drying out. Glaze can be drizzled fresh or baked on top for a softer finish. Soak baking dish immediately after use for easier cleanup.
