  • 1 cup (90g) rolled oats
  • ½ cup (120g) pumpkin puree
  • 1 cup (240ml) milk of choice (e.g., oat milk)
  • ¼ cup (60g) plain Greek yogurt
  • 2 tablespoons (30ml) maple syrup
  • 1 tablespoon (12g) chia seeds
  • 1 teaspoon (5ml) vanilla extract
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ⅛ teaspoon allspice (optional)
  • Pinch of salt (optional)

Instructions

  1. Make your spice blend (if using homemade): In a small bowl, combine the cinnamon, nutmeg, ginger, cloves, and allspice. Stir with a fork until evenly mixed. Set aside.
  2. Mash the pumpkin: In your mason jar or a separate bowl, add the pumpkin puree and about 2 tablespoons of the milk. Use a fork to mash and stir until the pumpkin is smooth and there are no lumps.
  3. Add the remaining wet ingredients: Pour in the rest of the milk, the Greek yogurt, maple syrup, and vanilla extract. Stir until everything is a uniform orange color.
  4. Add the dry ingredients: Sprinkle in the rolled oats, chia seeds, and 2 teaspoons of your pumpkin pie spice blend. Stir well for about 30 seconds, scraping the bottom and sides of the jar.
  5. Taste and adjust: Taste the mixture now. It should be slightly sweeter and more spiced than you want the final product to be. If it tastes flat, add a pinch more salt or an extra dash of cinnamon.
  6. Seal and refrigerate: Put the lid on your jar and place it in the fridge. Let it sit for at least 4 hours, but overnight is best (8 to 12 hours).
  7. Serve cold or warm: In the morning, give the oats a good stir. If too thick, stir in a splash of milk. Eat cold or microwave for 45-60 seconds if preferred. Top with optional toppings and enjoy.

Notes

Mashing the pumpkin with a little milk first prevents lumps. Use room temperature ingredients if in a hurry. Add toppings just before serving to keep them crunchy. For a thicker texture, add extra chia seeds; for thinner, add more milk. Store in fridge up to 5 days; freeze up to 3 months.
