Ingredients

Scale
  • 1 pound breakfast sausage
  • 1 (30-ounce) bag frozen shredded hash browns
  • 8 large eggs
  • 1 cup whole milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 cups shredded cheddar cheese
  • Optional: ¼ cup chopped green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Spray your 9×13-inch baking dish with nonstick cooking spray.
  2. Cook the sausage in a large skillet over medium-high heat, breaking it apart, until browned and cooked through, about 6 to 8 minutes. Transfer to a plate lined with paper towels to drain.
  3. Spread the frozen hash browns evenly across the bottom of the prepared baking dish. Do not thaw them.
  4. Sprinkle the cooked sausage evenly over the hash browns.
  5. Top with 1½ cups of the shredded cheddar cheese, reserving the remaining ½ cup.
  6. In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until smooth.
  7. Pour the egg mixture evenly over the casserole. Let it sit for 2 to 3 minutes.
  8. Sprinkle the reserved ½ cup of cheddar cheese over the top.
  9. Bake on the middle rack for 35 to 40 minutes, until the edges are golden brown and bubbly and a knife inserted into the center comes out mostly clean.
  10. Let the casserole rest for 5 to 10 minutes before cutting. Garnish with chopped green onions if desired.

Notes

Do not thaw the hash browns; keep them frozen for the best crispy texture. Let the casserole rest before cutting to ensure clean slices. For a make-ahead option, assemble the casserole the night before and refrigerate, then bake as directed, adding 5 to 10 minutes if needed.
