  • 1 large navel or cara cara orange
  • ½ cup (100g) granulated sugar
  • Pinch of salt (about ⅛ teaspoon)

Instructions

  1. Wash the orange well, then cut into 8-10 chunks, including the peel. Remove any seeds.
  2. Rinse fresh cranberries and discard any soft or bruised ones.
  3. Place orange chunks in a food processor and pulse 5-6 times until finely chopped. Scrape down sides.
  4. Add cranberries, sugar, and salt to the food processor. Pulse 8-10 times until cranberries are broken down but still chunky.
  5. Taste and adjust sweetness if needed by adding more sugar and pulsing once or twice.
  6. For best flavor, let relish rest in the refrigerator for at least 30 minutes before serving.

Notes

For a less sweet relish, start with ⅓ cup sugar and add more after tasting. Cold cranberries (frozen for 15 minutes) chop more cleanly. The relish can be made up to 10 days in advance and freezes well for up to 3 months. Do not over-process; aim for a chunky, salsa-like texture.
