A quick and easy fresh peach jalapeño salsa that balances sweet and spicy flavors, perfect as a topping for grilled chicken, tacos, fish, or as a dip.

  • 3 medium fresh peaches, ripe but firm
  • 1 medium jalapeño pepper, seeded for less heat or with seeds for more spice
  • 1/4 cup finely diced red onion
  • 2 tablespoons chopped fresh cilantro
  • Juice of 1 lime (about 2 tablespoons)
  • 1 teaspoon honey (or agave syrup for vegan option)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon extra virgin olive oil (optional)

Instructions

  1. Wash and dry the peaches, then cut around the pit and dice into small, uniform cubes about 1/2-inch.
  2. Slice the jalapeño in half lengthwise, scrape out seeds and membranes if desired to reduce heat, then finely dice. Optionally, char jalapeño halves on a hot pan for 1-2 minutes before dicing for smoky flavor.
  3. Finely dice about 1/4 cup of red onion.
  4. Rinse and pat dry fresh cilantro leaves, then roughly chop to fill 2 tablespoons.
  5. In a mixing bowl, gently fold together peaches, jalapeño, onion, and cilantro. Add lime juice, honey, salt, and pepper. Drizzle olive oil last and stir carefully to combine without breaking down the fruit. Taste and adjust seasoning.
  6. Let the salsa sit for at least 10 minutes at room temperature or chill in the fridge for 30 minutes to allow flavors to marry and mellow the jalapeño heat.
  7. Stir before serving if liquid has collected at the bottom.
