Ingredients

  • Cherry tomatoes, washed and halved
  • Fresh mozzarella balls (bocconcini or ciliegine size)
  • Fresh basil leaves, whole

  • Baby carrots or sliced cucumbers
  • Fresh fruit pieces like apple slices or berries
  • Whole grain crackers or mini pita triangles
  • Hummus or yogurt-based dip
  • Hard-boiled eggs (optional)

Instructions

  1. Rinse cherry tomatoes and pat dry. If tomatoes are large, slice them in half. Drain fresh mozzarella balls and gently pat them dry to avoid sogginess. Tear basil leaves into smaller pieces if they’re large.
  2. On each skewer, thread one cherry tomato half (or whole if small), one mozzarella ball, and a basil leaf. Repeat for all skewers. Arrange them neatly on the bento box side or a small plate.
  3. Drizzle skewers with a little extra virgin olive oil and, if desired, a light balsamic glaze. Optionally sprinkle a pinch of salt and fresh cracked pepper for extra flavor.
  4. Wash and slice baby carrots or cucumbers into sticks. Slice fruit into small, manageable pieces, avoiding any choking hazards for younger kids.
  5. Place crackers or pita triangles in one compartment of the bento box. Spoon hummus or yogurt dip into a small ramekin or silicone cup to keep it contained.
  6. If using hard-boiled eggs, peel and halve them, then add to the box for a well-rounded meal.
  7. Arrange all components neatly in the bento box compartments, ensuring nothing is overcrowded. Use dividers or silicone cups to keep flavors from mixing.
  8. Close the box securely and keep it refrigerated if not eaten immediately. For school lunches, pack with an ice pack to keep everything fresh.
