Ingredients

  • Honey, about 1 teaspoon per stacker
  • Fresh strawberries, washed and thinly sliced (6-8 slices per rice cake)
  • Optional toppings: chia seeds or hemp seeds for crunch and nutrition

Instructions

  1. Rinse the strawberries under cold water, pat dry gently, then slice thinly (about 1/8 inch thick).
  2. Spread a generous but even layer of sunbutter (1 to 1.5 tablespoons) on each rice cake using a butter knife or spatula.
  3. Arrange the sliced strawberries evenly over the sunbutter layer (6-8 slices per rice cake).
  4. Drizzle about 1 teaspoon of honey over the strawberries on each stacker. Warm honey slightly if needed for easier drizzling.
  5. Optionally, sprinkle a pinch of chia seeds or hemp seeds on top for added crunch and nutrition.
  6. Serve as single-layer rice cakes or gently stack two or three together for presentation, being careful to avoid sliding.

Notes

If sunbutter is too thick, warm it slightly in the microwave for 10-15 seconds for easier spreading. Assemble just before serving to keep rice cakes crisp. Store components separately if prepping ahead to avoid sogginess. Use a tiny dab of sunbutter as glue when stacking multiple rice cakes.
