This Apple Cider Mimosa with a cinnamon rim is a quick and easy fall cocktail that combines brut champagne, apple cider, and a touch of ginger beer for a festive, crowd-pleasing drink. Perfect for brunch or holiday gatherings, it features a maple-cinnamon rim that adds a warm, autumnal touch.

  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon (preferably Penzeys Vietnamese Cinnamon)
  • 1 tablespoon maple syrup (real maple syrup, not pancake syrup)
  • 1 bottle (750 ml) chilled brut champagne or prosecco
  • 1 ½ cups chilled apple cider (unfiltered preferred)
  • ¼ cup chilled ginger beer (optional, recommended; e.g., Fever-Tree Ginger Beer)
  • 2 tablespoons bourbon (optional; e.g., Buffalo Trace or Bulleit)
  • Ice (optional, for serving over ice)
  • Thin apple slices (Honeycrisp or Fuji) for garnish
  • Cinnamon sticks for garnish
  • Fresh rosemary sprigs (optional) for garnish

Instructions

  1. Prepare the cinnamon-sugar mixture: In a small shallow dish, combine the maple sugar, granulated sugar, and ground cinnamon. Whisk with a fork until evenly blended. In a separate small shallow dish, pour the maple syrup.
  2. Rim the glasses: Dip the rim of each glass into the maple syrup, rotating gently to coat about ¼ inch of the rim. Let excess drip off, then dip the rim into the cinnamon-sugar mixture, rotating to coat evenly. Tap gently to remove excess. Set aside to let the rim set while you prepare the drink base.
  3. Mix the cider base: In a pitcher, combine the chilled apple cider and ginger beer (if using). Stir gently. If adding bourbon, stir it in now.
  4. Add the champagne: Just before serving, pour the chilled champagne or prosecco into the pitcher with the cider mixture. Stir very gently to combine without losing too many bubbles.
  5. Pour and garnish: Carefully pour the mimosa mixture into the prepared glasses, filling about ¾ full. Add a thin apple slice to each glass (cut a small slit so it sits on the rim), a cinnamon stick for stirring, and a rosemary sprig if desired.
  6. Serve immediately: Best enjoyed within 10-15 minutes of pouring, while bubbles are lively and the cinnamon rim is fresh.

Notes

Chill all ingredients (champagne, cider, ginger beer, even glasses) for at least 4 hours before serving. Rim glasses just before serving to prevent the cinnamon-sugar from dissolving. Use brut champagne to balance sweetness. For a non-alcoholic version, substitute champagne with sparkling apple cider or sparkling water. The ginger beer is optional but recommended for added warmth.
