Instructions

  1. Preheat your oven to 375°F (190°C). Place a rack in the center of the oven.
  2. Prepare the apples: Peel, core, and slice 6 medium apples into ¼-inch thick slices. Place in a large mixing bowl. Add ¼ cup granulated sugar, 2 tablespoons all-purpose flour, 1 teaspoon ground cinnamon, and 1 tablespoon lemon juice. Toss until evenly coated. Set aside.
  3. Brown the butter: Place ½ cup (1 stick) unsalted butter in a medium skillet or saucepan over medium heat. Melt completely, then continue cooking, swirling occasionally, until the butter foams and brown specks form (about 3-5 minutes). Remove from heat immediately and pour into a heatproof bowl.
  4. Make the topping: In a medium bowl, combine 1 cup rolled oats, ¾ cup all-purpose flour, ½ cup packed brown sugar, and ¼ teaspoon salt. Stir with a fork. Pour the browned butter over the dry ingredients, add 1 teaspoon vanilla extract, and stir until moistened and clumpy.
  5. Assemble the crisp: Pour the apple mixture into an 8×8-inch baking dish and spread evenly. Sprinkle the oat topping evenly over the apples. Do not press down.
