Kid-Approved Kielbasa & White Bean Soup Easy 30-Minute Dinner

A quick and hearty soup made with smoky kielbasa, creamy white beans, and savory vegetables, ready in just 30 minutes. Perfect for busy weeknights and loved by the whole family.

  • 12 ounces kielbasa, sliced into half-moons
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 4 cups low-sodium chicken broth
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Parmesan cheese, for serving

Instructions

  1. Prep your ingredients first: dice the onion, carrots, and celery; mince the garlic; slice the kielbasa into half-moons about 1/4-inch thick; drain and rinse the beans; open the tomatoes.
  2. Heat the pot over medium-high heat. Add 1 tablespoon of olive oil and let it shimmer for about 30 seconds.
  3. Add the sliced kielbasa in a single layer (work in batches if needed). Cook undisturbed for 3-4 minutes until deeply browned, then stir and cook for another 2-3 minutes.
  4. Remove the kielbasa with a slotted spoon and set aside on a plate. Leave the rendered fat in the pot.
  5. Reduce the heat to medium. Add the diced onion, carrots, and celery. Cook for 5-6 minutes, stirring occasionally, until softened and the onion is translucent.
  6. Add the minced garlic and stir constantly for 30 seconds until fragrant.
  7. Pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the pot (deglazing).
  8. Add the drained beans, undrained tomatoes, oregano, thyme, and bay leaf. Stir together. Bring to a boil, then reduce heat to low and simmer uncovered for 15 minutes.
  9. Return the browned kielbasa to the pot. Stir and let it heat through for 2-3 minutes. Taste and adjust salt and pepper.
  10. Remove the bay leaf and discard.
  11. Ladle the soup into bowls and garnish with fresh parsley and a generous sprinkle of Parmesan cheese. Serve hot.

Notes

Brown the kielbasa well for maximum flavor. Use low-sodium broth to control saltiness. For a thicker soup, mash half a can of beans before adding. The soup tastes even better the next day.
