Kid-Approved Roasted Acorn Squash Rings with Maple Butter

Roasted acorn squash rings brushed with a simple maple butter, caramelized at the edges and tender in the middle. A sweet and savory side dish that even picky eaters will love.

  • 2 medium acorn squash
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons pure maple syrup
  • 1 tablespoon olive oil
  • ½ teaspoon fine sea salt, plus a pinch
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon fresh thyme or parsley, chopped (optional garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  2. Using a sharp chef’s knife, trim off the very top and bottom of each acorn squash so they sit flat. Stand the squash upright and slice it in half crosswise (not lengthwise) to create rings. Scoop out the seeds and stringy pulp with a sturdy spoon.
  3. Peel the squash using a vegetable peeler (optional but recommended for tender rings).
  4. Lay each peeled half flat and slice crosswise into ½-inch (1.25 cm) thick rings. You should get about 4 to 5 rings per half.
  5. Arrange the rings in a single layer on the prepared baking sheet, leaving space between each ring to avoid overcrowding.
  6. In a small bowl, whisk together the melted butter, maple syrup, olive oil, salt, and pepper.
  7. Using a pastry brush, coat the tops of the rings with about half the maple butter mixture.
  8. Roast for 15 minutes.
  9. Carefully flip each ring using a spatula. Brush the other side with the remaining maple butter.
  10. Roast for another 10 to 15 minutes, until golden brown on the edges and tender when pierced with a fork.
  11. Serve immediately. Sprinkle with fresh thyme or parsley if desired.

Notes

For extra crispy edges, broil the rings for the last 1 to 2 minutes, watching carefully to prevent burning. If you don’t have a pastry brush, use the back of a spoon to spread the butter mixture. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days; reheat in a 350°F (175°C) oven for 5 to 7 minutes.
