Light Apple Cider Mimosa Easy Cinnamon Sugar Rim

A crisp, refreshing mimosa made with dry brut Champagne and unfiltered apple cider, finished with a warm cinnamon sugar rim. Perfect for holiday brunches or cozy celebrations.

  • 1 bottle (750 ml) Champagne or brut sparkling wine, chilled
  • 1 ½ cups (360 ml) apple cider, chilled
  • Ice cubes (optional)
  • 2 tablespoons (25 g) granulated sugar
  • 1 teaspoon (2.5 g) ground cinnamon
  • 1 tablespoon (15 ml) honey or maple syrup
  • Apple slices (for garnish, optional)
  • Cinnamon sticks (for garnish, optional)

Instructions

  1. In a small shallow dish, combine 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon. Stir until evenly mixed.
  2. Using a pastry brush or your finger, spread a thin, even layer of honey or maple syrup around the outer rim of each glass. Avoid getting it on the inside.
  3. Dip each glass into the cinnamon sugar mixture at a 45-degree angle, twisting gently to coat the entire rim. Tap off excess. Set aside to let the rim set slightly.
  4. If using ice, drop one or two large cubes into each glass.
  5. Fill each glass about one-third full with chilled apple cider (about ¼ cup or 60 ml per standard flute).
  6. Slowly pour chilled Champagne or sparkling wine into the glass, tilting it slightly to preserve bubbles. Fill to about an inch from the rim. Use a ratio of roughly 2 parts Champagne to 1 part apple cider.
  7. Stir gently once or twice with a long spoon or cinnamon stick.
  8. Garnish with a thin apple slice and/or a cinnamon stick. Serve immediately.

Notes

Chill all ingredients thoroughly before assembling. For best results, prepare rimmed glasses up to 2 hours ahead and assemble just before serving. Use a dry brut Champagne to balance the sweetness of the apple cider. For a non-alcoholic version, substitute Champagne with sparkling apple cider or club soda.
