Ingredients

Scale
  • 1 ½ cups (180g) all-purpose flour
  • ½ cup (120g) plain Greek yogurt
  • 4 tablespoons (56g) cold unsalted butter, cut into small cubes
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2–3 tablespoons cold water (if needed)
  • 4 medium apples (Honeycrisp, Fuji, or Granny Smith), peeled, halved, and cored
  • 2 tablespoons (25g) brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 cup (240ml) water
  • ⅓ cup (67g) brown sugar
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water
  • 1 tablespoon (14g) butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Make the dough: In a large bowl, whisk together flour, baking powder, and salt. Add cold butter cubes and cut into the flour using a pastry cutter or two forks until the mixture resembles coarse crumbs with some pea-sized butter pieces. Add Greek yogurt and stir with a fork until the dough just comes together. If dry, add cold water one tablespoon at a time. Flatten into a disk, wrap in plastic, and refrigerate while preparing apples and sauce.
  3. Prepare the apples: Peel apples and cut in half through the stem. Use a small spoon or melon baller to scoop out the core and seeds from each half. In a small bowl, mix brown sugar, cinnamon, and lemon juice. Rub this mixture all over the apple halves, getting some into the hollows. Set aside.
  4. Make the cinnamon sauce: In a small saucepan, combine water, brown sugar, and cinnamon. Bring to a simmer over medium heat, whisking occasionally. Stir cornstarch mixture into the simmering sauce while whisking constantly. Cook for 2-3 minutes until thickened. Remove from heat and stir in vanilla and 1 tablespoon butter until melted. Set aside.
  5. Roll out the dough: On a lightly floured surface, roll the chilled dough into a 12×16 inch rectangle. Cut into 8 squares, roughly 4×4 inches each.
  6. Assemble the dumplings: Place an apple half, cut side up, in the center of each dough square. Bring the corners up over the apple and pinch seams to seal. Place each dumpling seam-side down in a greased 9×13 baking dish.
  7. Add the sauce and bake: Pour cinnamon sauce evenly over and around the dumplings. Bake for 30-35 minutes until golden brown and apples are tender. Let rest for 5-10 minutes before serving.

Notes

Don’t overwork the dough; keep butter cold. If tops brown too quickly, tent with foil for last 10 minutes. For gluten-free, use 1:1 gluten-free flour blend. For dairy-free, use dairy-free yogurt and substitute butter with coconut oil or vegan butter.
