  • 1 cup whole milk ricotta cheese
  • Fig jam
  • Prosciutto slices
  • Extra virgin olive oil, for drizzling

  • Pinch of salt
  • Honey (optional, for ricotta seasoning)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the baguette into about 1/4-inch (6 mm) thick slices.
  3. Arrange the slices in a single layer on a baking sheet and bake for 8-10 minutes or until edges turn golden and crisp.
  4. While the bread toasts, place 1 cup (240 g) of ricotta cheese in a mixing bowl and whip with a hand mixer or stand mixer on medium speed for 2-3 minutes until fluffy.
  5. Season the whipped ricotta with a pinch of salt and freshly cracked black pepper. Optionally, stir in a teaspoon of honey.
  6. Spread about 1 tablespoon of fig jam on each toasted baguette slice.
  7. Dollop 1 to 2 tablespoons of whipped ricotta on top and gently spread it out.
  8. Fold a slice or two of prosciutto and place it on top of the ricotta.
  9. Lightly drizzle extra virgin olive oil over the crostini and sprinkle fresh thyme or rosemary leaves if using.
  10. Serve immediately for the best texture and flavor.
