  • 6 tablespoons unsalted butter, divided
  • 3/4 cup packed dark brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk, room temperature
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In your cake pan or skillet, melt 4 tablespoons of the unsalted butter over medium heat. Stir in 3/4 cup packed dark brown sugar until dissolved and bubbling gently, about 2-3 minutes. Remove from heat and arrange the sliced peaches in a single layer on top of the caramel.
  3. In a medium bowl, whisk together 1 1/2 cups all-purpose flour, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt. Set aside.
  4. In a large bowl, beat the remaining 2 tablespoons butter with 3/4 cup granulated sugar until light and fluffy, about 3-4 minutes using an electric mixer.
  5. Beat in the eggs one at a time, then add 1 teaspoon vanilla extract. Mix until combined.
  6. Alternately add the dry ingredients and 1/2 cup whole milk to the butter mixture, starting and ending with the dry ingredients. Mix gently until just combined. Stir in 1 tablespoon fresh lemon juice.
  7. Pour the batter evenly over the peach slices in the pan and smooth the top gently with a spatula.
  8. Bake for 40-45 minutes until the cake is golden brown and a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes. Run a knife around the edges to loosen and carefully flip the cake onto a serving plate.
  10. Serve warm or at room temperature.
