  • 8 oz cream cheese, softened
  • 1/2 cup buffalo sauce (Frank’s RedHot recommended)
  • 1/2 cup shredded cheddar cheese (sharp or mild)
  • 1/4 cup ranch dressing
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 tablespoons chopped green onions (optional)
  • 1 package wonton wrappers (about 50 count)
  • Olive oil spray (or avocado oil spray)
  • Extra ranch or blue cheese dressing for dipping
  • Celery sticks for serving
  • Extra green onions for garnish (optional)

Instructions

  1. Make the filling: In a medium mixing bowl, combine 8 oz softened cream cheese, 1/2 cup buffalo sauce, 1/2 cup shredded cheddar, 1/4 cup ranch dressing, 1/4 teaspoon garlic powder, and 1/4 teaspoon onion powder. Mix until smooth and well combined.
  2. Add the chicken: Fold in 2 cups of shredded chicken until evenly coated. If using green onions, stir them in now. If the mixture seems too loose, refrigerate for 10 minutes to firm up.
  3. Set up your assembly station: Lay out wonton wrappers on a clean cutting board. Fill a small bowl with water. Place the bowl of filling nearby.
  4. Fill the wontons: Place one wonton wrapper on your work surface in a diamond shape. Add about 1 tablespoon of filling to the center. Do not overfill.
  5. Seal the edges: Dip your finger in water and run it along all four edges of the wrapper. Fold the bottom point up to meet the top point, forming a triangle. Press firmly along the edges to seal, pushing out any air bubbles.
  6. Repeat with remaining wrappers and filling. Place finished wontons in a single layer on a plate or baking sheet. This recipe makes about 24-28 wontons.
  7. Preheat your air fryer to 350°F (175°C) for 3 minutes.
  8. Lightly spray the air fryer basket with olive oil spray. Arrange wontons in a single layer, not touching. Work in batches (about 10-12 per batch).
  9. Spray the tops of the wontons lightly with olive oil spray.
  10. Air fry at 350°F for 6 minutes. At the 3-minute mark, flip each wonton with tongs and spray the other side lightly. Cook until golden brown and crispy.
  11. Transfer cooked wontons to a plate and let rest for 2-3 minutes before serving (filling is very hot).
  12. Serve on a platter with ranch or blue cheese dressing for dipping, celery sticks, and garnish with extra green onions if desired.

Notes

For a milder version, use 1/4 cup buffalo sauce and add extra ranch. For spicier, add cayenne pepper or use hotter buffalo sauce. To freeze, assemble uncooked wontons on a baking sheet until solid, then transfer to a freezer bag for up to 3 months. Cook from frozen, adding 2-3 minutes to air fryer time. If baking instead of air frying, bake at 400°F for 12-15 minutes, flipping halfway through.
