This quick buffalo chicken dip with cream cheese is a recreation of a legendary sports bar dip. It’s creamy, spicy, and perfect for game day or weeknights, with tender shredded chicken and a golden cheddar crust.

Ingredients

Scale
  • 16 oz cream cheese, softened to room temperature
  • 1 cup ranch dressing
  • 1/2 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 3 cups cooked chicken, shredded
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 cups shredded sharp cheddar cheese, divided
  • 2 green onions, thinly sliced (for garnish)
  • Tortilla chips, celery sticks, carrot sticks, or crusty bread for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Ensure cream cheese is at room temperature.
  2. Shred the cooked chicken using two forks or your hands.
  3. In a medium mixing bowl, combine softened cream cheese, ranch dressing, and Frank’s RedHot sauce. Beat with a hand mixer on medium speed until smooth and well combined.
  4. Fold in the shredded chicken, 1 cup of shredded cheddar, garlic powder, and black pepper. Stir until evenly distributed. Taste and adjust seasoning if needed.
  5. Transfer the mixture to a greased 9×9-inch baking dish or 8-inch cast iron skillet. Smooth the top with a spatula. Sprinkle the remaining 1 cup of cheddar cheese evenly over the surface.
  6. Bake for 18-22 minutes, until bubbly around the edges and the cheese on top is melted and starting to brown. Optionally, broil for 1-2 minutes for a deeper golden color.
  7. Let the dip rest for 5 minutes before serving.
  8. Garnish with sliced green onions and serve warm with tortilla chips, celery sticks, or other dippers.

Notes

For best texture, use room temperature cream cheese and hand-shredded chicken. Do not overbake; the dip will continue to set as it cools. To make ahead, assemble without the top cheese layer, refrigerate up to 24 hours, then add cheese and bake, adding 5-7 minutes. For a spicier dip, add extra hot sauce or cayenne; for milder, reduce hot sauce and add more ranch. Leftovers keep in the refrigerator for up to 4 days and can be frozen for up to 3 months.
