A quick and easy breakfast toast featuring creamy cottage cheese, smoky smoked salmon, and crunchy everything bagel seasoning for a satisfying and indulgent start to your day.

Ingredients

Scale
  • 2 slices thick-sliced sourdough or whole-grain bread
  • 1/2 cup (120g) small-curd, full-fat cottage cheese
  • 34 thin slices (about 2.5 oz or 70g) smoked salmon
  • 1 tablespoon everything bagel seasoning
  • Fresh lemon juice, to taste
  • Fresh dill or chives, chopped (optional)
  • Olive oil or butter for toasting (optional)
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Toast the bread slices until golden brown and crisp. If using a skillet, heat 1 teaspoon olive oil or butter over medium heat and cook the slices about 2-3 minutes per side.
  2. Spoon about 1/2 cup (120g) small-curd cottage cheese into a bowl. Add a pinch of salt, freshly cracked black pepper, and a few drops of fresh lemon juice. Stir gently to combine.
  3. Generously spread the seasoned cottage cheese over each slice of toast.
  4. Arrange 3-4 thin slices (about 2.5 oz or 70g) of smoked salmon on top of the cottage cheese.
  5. Sprinkle about 1 tablespoon of everything bagel seasoning evenly over each toast.
  6. Add a final squeeze of lemon juice over the top and scatter chopped fresh dill or chives if desired.
  7. Serve immediately to enjoy the contrast of warm toast and cool toppings.

Notes

For creamier texture, let cottage cheese sit at room temperature for 10 minutes before spreading. Use thicker bread slices or toast longer to prevent sogginess. Rinse smoked salmon if too salty. Substitute avocado or roasted cherry tomatoes for a vegetarian option. Use gluten-free bread for gluten-free diet. Everything bagel seasoning can be homemade or store-bought.
