These quick maple glazed delicata squash rings are a fast, delicious side dish that comes together in under 20 minutes. With a sweet and smoky maple glaze, they’re perfect for busy weeknights and are sure to please even picky eaters.

  • 2 medium delicata squash
  • 3 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh thyme or parsley (optional garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
  2. Wash the delicata squash well. Cut off both ends, then slice the squash crosswise into 1/2-inch thick rings. Use a spoon to scoop out the seeds and stringy pulp from the center of each ring.
  3. In a small bowl, whisk together the maple syrup, olive oil, smoked paprika, garlic powder, salt, and pepper.
  4. Arrange the squash rings in a single layer on the prepared baking sheet. Using a pastry brush or the back of a spoon, brush both sides of each ring generously with the maple glaze. Pour any remaining glaze over the rings.
  5. Roast for 8 minutes, then flip each ring carefully with a spatula. Roast for another 7-10 minutes, until the edges are caramelized and the squash is tender when pierced with a fork.
  6. Let the squash rings rest on the baking sheet for 2 minutes. Transfer to a serving platter and garnish with fresh herbs if desired. Serve warm.

Notes

For even caramelization, flip the rings halfway through. Don’t overcrowd the pan; give each ring space to roast. Watch the last few minutes to prevent burning. Double the batch for leftovers—they reheat well.
