These quick peanut butter banana overnight oats are the perfect make-ahead breakfast for busy mornings. With just 5 minutes of prep, you’ll have a creamy, delicious, and nutritious meal ready to grab from the fridge.

Ingredients

  • 1 cup rolled oats (not instant)
  • 1 cup milk of choice (dairy, almond, oat, or coconut)
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon chia seeds (optional)
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 ripe banana (spotty is best)
  • 2 tablespoons creamy peanut butter
  • Optional toppings: sliced banana, extra peanut butter, dark chocolate chips, chopped nuts, cinnamon

Instructions

  1. Mash the ripe banana in a small bowl with a fork until mostly smooth with a few small chunks.
  2. In a mason jar or container, add rolled oats, chia seeds (if using), and a pinch of salt. Stir or shake to combine.
  3. Pour in milk, Greek yogurt, maple syrup or honey, and vanilla extract. Do not stir yet.
  4. Spoon the mashed banana over the liquid, then add peanut butter in dollops. Do not stir yet.
  5. Use a knife or spoon to gently swirl the peanut butter and banana through the oats, leaving ribbons of peanut butter.
  6. Seal the jar and refrigerate for at least 4 hours, preferably overnight.
  7. In the morning, stir well. If too thick, add a splash of milk. Top with desired toppings and enjoy cold or warm (microwave 30-60 seconds).

Notes

For best texture, use rolled oats, not instant. Ripe bananas (with brown spots) mash easier and add more sweetness. The oats keep in the fridge for up to 5 days. To reheat, microwave for 45-60 seconds with a splash of milk. For a vegan version, use plant-based milk and dairy-free yogurt, and maple syrup instead of honey.
