A bright, tart, and bubbly lemonade punch with fresh berries and mint, perfect for summer gatherings and evoking nostalgic summer memories.

Ingredients

Scale
  • 6 large lemons, juiced (about 1 cup / 240 ml)
  • 3/4 cup (150 g) granulated sugar
  • 3 cups (720 ml) water, divided
  • 2 cups (300 g) mixed berries (blueberries, raspberries, strawberries), fresh or frozen
  • A handful (about 10) fresh mint leaves, bruised
  • 4 cups (960 ml) sparkling water or club soda, chilled
  • Ice cubes, as needed
  • Lemon slices and extra berries for garnish

Instructions

  1. Make the Simple Syrup: In a medium saucepan, combine 3/4 cup granulated sugar with 1 cup water. Heat over medium heat, stirring occasionally, until the sugar fully dissolves and the mixture is clear (about 5 minutes). Remove from heat and let cool completely.
  2. Juice the Lemons: While the syrup cools, juice 6 large lemons to yield about 1 cup of fresh lemon juice. Strain if you want a pulp-free punch.
  3. Prepare the Fruit: Rinse the berries well. Hull and slice strawberries thinly if using. Set aside a handful of berries and lemon slices for garnish.
  4. Combine Lemon Juice and Syrup: In a punch bowl or pitcher, mix the cooled simple syrup with the lemon juice and 2 cups cold water. Stir gently to combine.
  5. Add the Fruit and Mint: Toss in the mixed berries and bruised mint leaves. Stir lightly and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Add Sparkling Water: Just before serving, pour in 4 cups chilled sparkling water or club soda. Stir gently to keep the bubbles alive.
  7. Serve: Fill glasses with ice cubes, ladle the punch over, and garnish with reserved lemon slices and berries. Enjoy immediately.

Notes

Make the simple syrup first to ensure smooth sweetness. Add sparkling water just before serving to keep fizz. Let fruit and mint steep for at least 30 minutes for deeper flavor. Serve punch over ice in individual glasses to avoid dilution. Frozen fruit cubes can be used to keep punch cold without watering it down. Adjust sweetness to taste. Can substitute sugar with honey, agave syrup, maple syrup, or sugar substitutes for dietary preferences.
