  • ½ cup cooked bacon, crumbled
  • 1 tablespoon ranch seasoning mix
  • 6 cups water (for baking soda bath)
  • 3 tablespoons baking soda
  • 1 large egg, beaten
  • Coarse sea salt or pretzel salt
  • 1 tablespoon melted butter (for brushing after baking)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup cream cheese, softened
  • ¼ cup milk
  • 1 teaspoon ranch seasoning mix (for dip)
  • ¼ cup cooked bacon, crumbled (for dip garnish)

Instructions

  1. In a large mixing bowl, combine warm water (110°F), sugar, and active dry yeast. Stir gently and let sit for 5-7 minutes until foamy and bubbly.
  2. Add melted butter, salt, and 1 cup of flour to the yeast mixture. Stir until combined. Gradually add remaining 1 ½ cups flour, one half-cup at a time, mixing until a shaggy dough forms.
  3. Gently fold in crumbled bacon and ranch seasoning mix until evenly distributed.
  4. Turn dough out onto a lightly floured surface. Knead for 5-7 minutes until smooth and elastic.
  5. Place dough back in bowl, cover with a clean kitchen towel, and let rest for 10 minutes.
  6. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. In a large pot, bring 6 cups of water to a boil, then carefully stir in baking soda. Reduce heat to a gentle simmer.
  7. On a lightly floured surface, divide dough into 4 equal pieces. Roll each piece into a 12-inch rope. Cut each rope into 1-inch pieces (about 40-50 total).
  8. Working in batches of 6-8 pieces, drop dough bites into simmering baking soda water. Boil for 30 seconds, flip, and boil another 30 seconds. Remove with a slotted spoon and place on prepared baking sheet, spacing 1 inch apart.
  9. Brush each bite with beaten egg wash. Sprinkle generously with coarse sea salt or pretzel salt.
  10. Bake for 10-12 minutes until deep golden brown, rotating the baking sheet halfway through.
  11. As soon as bites come out of the oven, brush with melted butter. Let cool on baking sheet for 5 minutes.
  12. While pretzels bake, make the cheese dip: In a small saucepan over low heat, combine cream cheese and milk. Stir constantly until smooth. Add shredded cheddar cheese and 1 teaspoon ranch seasoning, stirring until melted and smooth. Transfer to a serving bowl and top with crumbled bacon.

Don’t overboil the bites—30 seconds per side is perfect. Use room temperature cream cheese for a smooth dip. Keep dough covered while shaping to prevent drying. The final butter brush is essential for a soft, bakery-style finish.
