This easy crockpot recipe features tender, juicy chicken thighs slow-cooked in a sticky honey garlic Asian glaze. Perfect for busy days, it delivers restaurant-quality flavor with minimal effort.

Ingredients

Scale
  • 3 pounds bone-in, skin-on chicken thighs (can use boneless for faster cooking)
  • 1/4 cup (85 g) honey
  • 1/3 cup (80 ml) soy sauce (low-sodium recommended)
  • 4 cloves garlic, minced
  • 2 tablespoons (30 ml) rice vinegar
  • 1 tablespoon (15 ml) sesame oil (optional but recommended)
  • 1 tablespoon freshly grated ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • Sliced green onions, for garnish
  • Toasted sesame seeds, for garnish

Instructions

  1. Pat the chicken thighs dry with paper towels to help the glaze stick better. (5 minutes)
  2. In a mixing bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, sesame oil, grated ginger, and red pepper flakes if using. Taste to ensure a balanced sweet, tangy, and garlicky flavor. (5 minutes)
  3. Place the chicken thighs skin side up in the crockpot. Pour the glaze evenly over the chicken, coating each piece. (5 minutes)
  4. Cover and cook on low for 5 to 6 hours, or on high for 3 to 4 hours, until the chicken is fall-off-the-bone tender and the glaze is thick and sticky. Check tenderness at 3 hours if cooking on high to prevent drying. (3–6 hours)
  5. If the sauce is too thin near the end, remove the chicken and set the crockpot to high. Mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the sauce. Let thicken for 10 minutes, then pour back over the chicken. (10 minutes)
  6. Garnish with sliced green onions and toasted sesame seeds just before serving. Serve over steamed rice or noodles. (5 minutes)

Notes

Pat chicken dry before glazing for better adhesion. Use bone-in, skin-on thighs for juiciness. Avoid lifting the lid during cooking to maintain heat. Thicken glaze with cornstarch slurry if needed. Substitute tamari or coconut aminos for gluten-free option. Adjust cooking time if using chicken breasts or other proteins.
