Savory Game Day Queso Fundido Recipe with Chorizo and Roasted Poblanos

  • 8 ounces fresh Mexican chorizo, casings removed
  • 2 large poblano peppers, roasted, peeled, and sliced
  • 4 ounces cream cheese, softened
  • 8 ounces Monterey Jack cheese, shredded
  • 4 ounces Oaxaca cheese, shredded or pulled (optional, substitute with mozzarella if unavailable)
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tablespoon olive oil
  • 2 tablespoons fresh cilantro, chopped (optional garnish)
  • 1 teaspoon fresh lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat broiler or grill. Roast poblano peppers directly on the rack, turning occasionally, until skin is blistered and charred (about 10 minutes). Transfer to a bowl and cover with plastic wrap to steam for 10 minutes.
  2. Once cooled, peel off blackened skin carefully and discard skin and seeds. Slice peppers into thin strips and set aside.
  3. Heat olive oil in a cast iron skillet over medium heat. Add chorizo, breaking it apart with a spatula, and cook until browned and crispy, about 6–8 minutes. Drain excess fat if necessary.
  4. Add chopped onion to skillet with chorizo and cook until translucent, about 3 minutes. Stir in minced garlic and cook an additional 1 minute until fragrant.
  5. Lower heat to medium-low and add cream cheese to skillet, stirring to melt and combine. Gently fold in roasted poblano strips.
  6. Sprinkle Monterey Jack and Oaxaca cheese evenly over the mixture and spread out for uniform melting.
  7. Transfer skillet to preheated oven at 400°F (200°C) and bake for 8–10 minutes, or until cheese is bubbly and lightly golden on top. If no oven-safe skillet, transfer mixture to baking dish before melting.
  8. Remove from oven and squeeze fresh lime juice over the top. Garnish with chopped cilantro if desired.
  9. Serve immediately with warm tortillas, chips, or veggies.

Notes

Roast poblanos ahead of time for best flavor and easy peeling. Moderate heat when cooking chorizo to get crispy texture without stewing. Use a blend of Monterey Jack and Oaxaca or mozzarella for ideal meltiness. Cream cheese adds creaminess and balances spices. If cheese isn’t bubbling after 10 minutes in oven, bake a little longer but watch to avoid burning.
