  • 1 pound ground beef (lean or 80/20)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chili powder
  • Salt and freshly ground black pepper, to taste
  • 1½ cups shredded sharp cheddar cheese
  • 2 tablespoons unsalted butter, softened
  • Optional: fresh parsley or chives for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the potatoes under cold running water to remove dirt, then dry thoroughly.
  2. Prick each potato several times with a fork to allow steam to escape. Place them directly on the oven rack or on a baking sheet. Roast for 50 to 60 minutes until skins are crisp and insides are tender when pierced with a fork.
  3. While the potatoes bake, heat a skillet over medium-high heat. Add the ground beef and cook, breaking up lumps, until browned and cooked through, about 7 minutes. Drain excess fat if necessary.
  4. Add the chopped onion and minced garlic to the beef. Sauté for 3-4 minutes until softened and fragrant.
  5. Stir in tomato sauce, ketchup, Worcestershire sauce, chili powder, salt, and pepper. Lower heat and simmer for 10 to 12 minutes, stirring occasionally, until the mixture thickens slightly and flavors meld. If it gets too thick, splash in a bit of water or broth.
  6. Remove the potatoes from the oven and let them cool for about 5 minutes until safe to handle but still warm.
  7. Slice each potato in half lengthwise. Using a spoon, carefully scoop out most of the flesh into a mixing bowl, leaving a thin layer to keep the skin intact and sturdy.
  8. Add butter and half of the shredded cheddar to the potato flesh. Mash together until creamy and smooth. Season with a little salt and pepper if needed.
  9. Fold the cheesy mashed potato back into the skins (or pile it on top) and spoon the sloppy joe mixture evenly over the stuffed potatoes.
  10. Top each potato with remaining cheddar cheese. Place the stuffed potatoes back on the baking sheet and return to the oven for 10 minutes or until the cheese melts and bubbles.
  11. Remove from oven and garnish with fresh parsley or chives if desired. Serve immediately for best melty, cozy texture.
