  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 medium yellow onions, diced
  • 3 large carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 cup dry red wine (Cabernet Sauvignon or Merlot recommended)
  • 2 cups beef broth, low sodium preferred
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 2 bay leaves
  • 1/4 cup all-purpose flour (30 g)
  • Salt and freshly ground black pepper, to taste
  • 3 medium Yukon Gold potatoes, peeled and cubed
  • Fresh parsley, for garnish

Instructions

  1. Pat the beef cubes dry with paper towels. Toss them in the all-purpose flour seasoned with salt and pepper until evenly coated.
  2. Heat olive oil in a large skillet over medium-high heat. In batches, sear the beef cubes until browned on all sides, about 2-3 minutes per batch. Transfer to the slow cooker.
  3. In the same skillet, reduce heat to medium and add diced onions, carrots, and celery. Cook until softened, about 5 minutes. Add minced garlic and cook for 1 more minute, stirring constantly.
  4. Pour dry red wine into the skillet to deglaze, scraping up browned bits. Let simmer for 2-3 minutes until slightly reduced.
  5. Pour the wine and vegetable mixture over the beef in the slow cooker. Add beef broth, tomato paste, Worcestershire sauce, thyme, and bay leaves. Stir gently to combine.
  6. Scatter the cubed potatoes over the stew mixture in the slow cooker.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours until beef is fork-tender and gravy is thick.
  8. Before serving, remove bay leaves and adjust seasoning with salt and pepper. If gravy is too thin, mix a tablespoon of flour with cold water to make a slurry, stir into stew, and cook on high for 15 more minutes to thicken.
  9. Garnish with freshly chopped parsley and serve hot with crusty bread or mashed potatoes.

Notes

For gluten-free, replace all-purpose flour with cornstarch or gluten-free flour blend. Use olive oil instead of butter for dairy-free. Searing the beef is important for flavor and color. Use a quality dry red wine you would drink, not cooking wine. Avoid lifting the slow cooker lid frequently to maintain heat. Adjust seasoning at the end. If gravy is too thin, thicken with a flour or cornstarch slurry near the end.
