  • ½ cup (100 grams) light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • About ½ cup (90 grams) rainbow sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate large bowl, beat the softened butter with granulated sugar and light brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, fully incorporating each before adding the next. Stir in the vanilla extract.
  5. Gradually add the dry flour mixture to the wet ingredients, mixing on low speed or folding with a spatula until just combined. Avoid overmixing.
  6. Cover the dough and refrigerate for at least 30 minutes to prevent spreading and improve texture.
  7. Scoop dough into rounded tablespoon-sized balls. Roll each ball in rainbow sprinkles to coat completely. Place on baking sheets about 2 inches apart.
  8. Bake for 9-11 minutes, until edges start to turn golden but centers remain soft.
  9. Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Chilling the dough before baking helps prevent spreading and improves texture. Do not overmix the dough once flour is added to avoid tough cookies.
