  • 3 cups (360g) powdered sugar, sifted
  • 1 teaspoon vanilla extract (for frosting)
  • 23 tablespoons whole milk or dairy-free alternative
  • Whimsical pencil-shaped sprinkles
  • Apple-shaped sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together 2 ¾ cups flour, 1 teaspoon baking powder, and ½ teaspoon salt. Set aside.
  3. In a large bowl, beat 1 cup softened butter and 1 ½ cups granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in two large eggs one at a time, mixing well after each addition. Then add 2 teaspoons vanilla extract and mix until combined.
  5. Gradually add the dry ingredients into the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  6. Use a cookie scoop or tablespoon to drop dough balls about 2 inches apart on the prepared baking sheets. Flatten each slightly with the palm of your hand or the bottom of a glass.
  7. Bake for 9-11 minutes until edges start to turn golden but centers remain soft. Do not overbake.
  8. Let the cookies rest on the baking sheet for 5 minutes before transferring to a cooling rack to cool completely.
  9. While cookies cool, beat ½ cup butter and 4 oz cream cheese until creamy and smooth. Gradually add 3 cups powdered sugar, then vanilla extract and milk, one tablespoon at a time until spreadable consistency is reached.
  10. Once cookies are cool, spread frosting generously on each and top with whimsical pencil and apple sprinkles.

Notes

Use room temperature butter and eggs for best texture. Do not overbake to keep cookies soft. Sift powdered sugar for smooth frosting. If frosting is too runny, chill for 10 minutes; if too stiff, add more milk. Store cookies in airtight container with a slice of bread to maintain moisture. Dough can be refrigerated up to 3 days before baking. Frosted cookies can be frozen for up to 3 months.
