A quick and easy Halloween party dip made with smoky black beans, sweet corn, and a creamy base. Ready in 10 minutes, it’s perfect for spooky gatherings and can be customized for any diet.

  • 1 can (15 oz) or 1.5 cups frozen corn kernels, thawed (fire-roasted preferred)
  • 1 cup sour cream (full-fat or dairy-free)
  • 8 oz cream cheese, softened to room temperature
  • 1 cup shredded Mexican blend cheese (or cheddar/jack mix)
  • 2 medium Roma tomatoes, diced and seeded
  • 4–5 stalks green onions, sliced thin
  • 1 small jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped (plus more for garnish)
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup sliced black olives (for garnish)
  • Tortilla chips for serving (black corn chips recommended)

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge 30 minutes before starting. In a rush, microwave on low for 15-20 seconds. Do not melt.
  2. Prep vegetables: Dice tomatoes, slice green onions, mince jalapeño (if using), and chop cilantro. Set aside.
  3. Char the corn (optional but recommended): Heat a small skillet over medium-high heat. Add corn kernels in a single layer. Cook without stirring for 3-4 minutes until dark spots appear. Stir once, cook another 2 minutes. Remove from heat.
  4. Mix the creamy base: In a large bowl, combine softened cream cheese and sour cream. Stir until smooth. Add chili powder, cumin, garlic powder, salt, and pepper. Mix thoroughly.
  5. Add beans and corn: Fold in drained black beans and charred (or plain) corn. Stir gently but thoroughly. Optionally, lightly mash some beans for a chunkier texture.
  6. Fold in remaining ingredients: Add diced tomatoes, sliced green onions, minced jalapeño, and chopped cilantro. Reserve a small amount for garnish. Add lime juice and stir until combined.
  7. Fold in shredded cheese: Reserve 1/4 cup for topping. Gently fold the rest into the dip. Do not overmix.
  8. Transfer to serving bowl: Spoon mixture into a Halloween-themed serving bowl. Smooth the top with a spatula. Sprinkle reserved cheese over the top.
  9. Create spooky garnish: Arrange black olive slices on top to look like spiders. Add reserved tomatoes, green onions, and cilantro around the edges. Optionally, place plastic spider rings or fake eyeballs around the bowl rim.
  10. Chill before serving (optional but recommended): Refrigerate for 20-30 minutes to let flavors meld. Serve immediately if in a rush.
  11. Serve with tortilla chips: Arrange chips around the dip bowl. Black corn chips create the most spooky presentation.

Notes

For best results, drain canned ingredients thoroughly to prevent watery dip. Let cream cheese come to room temperature for smooth mixing. Charring the corn adds smoky depth. The dip tastes even better after chilling overnight. For a vegan version, use plant-based sour cream and cream cheese. Store in an airtight container in the refrigerator for up to 4 days. Do not freeze.
