  • 1 cup BBQ sauce (e.g., Sweet Baby Ray’s)
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • ½ teaspoon freshly ground black pepper
  • 12 small slider buns, lightly toasted (King’s Hawaiian buns recommended)
  • Optional toppings: coleslaw, pickles, extra BBQ sauce

Instructions

  1. Finely chop the onion and mince the garlic (about 5 minutes).
  2. In a mixing bowl, combine BBQ sauce, apple cider vinegar, brown sugar, smoked paprika, and black pepper. Stir until sugar dissolves.
  3. Place chicken breasts or thighs at the bottom of the slow cooker. Scatter chopped onion and garlic evenly over the chicken.
  4. Pour the BBQ sauce mixture over the chicken, coating all pieces.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender and shreds easily.
  6. Remove chicken and shred with two forks or meat shredder claws. Return shredded chicken to slow cooker and stir to coat with sauce; let soak for 10 minutes.
  7. Lightly toast slider buns in toaster or oven until golden and slightly crisp.
  8. Assemble sliders by piling BBQ chicken onto buns. Add optional coleslaw or pickles if desired.
  9. Serve immediately while warm.

Notes

Use chicken thighs for juicier results. Avoid lifting the slow cooker lid during cooking to maintain moisture. If sauce is too thin after shredding, cook uncovered on high for 15-20 minutes to thicken. For gluten-free, use gluten-free buns or lettuce wraps. Can substitute brown sugar with honey. For spicy variation, add cayenne pepper or chipotle peppers.
