  • 1 bottle Oktoberfest beer (12 ounces)
  • 2 cups beef broth, low-sodium
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon whole black peppercorns
  • 4 cloves garlic, smashed
  • 2 bay leaves
  • 1 teaspoon mustard seeds (optional)
  • 1 large onion, quartered
  • 4 carrots, peeled and cut into chunks
  • 4–5 red potatoes, halved
  • Half a head of green cabbage, cut into wedges

Instructions

  1. Rinse and trim the brisket: Remove the corned beef from its package. Discard the brine and any liquid. Rinse the brisket under cold running water for about a minute to remove excess salt. Pat it dry with paper towels. Trim any thick fat caps, leaving about a quarter-inch for moisture. Set aside.
  2. Build the cooking liquid: In the slow cooker insert, combine the Oktoberfest beer, beef broth, brown sugar, peppercorns, smashed garlic, bay leaves, and mustard seeds. Stir until the sugar dissolves. Add the quartered onion.
  3. Add the brisket: Place the corned beef into the slow cooker, fat side up. If the brisket is too long, cut it in half to fit. The liquid should come about halfway up the sides. If it doesn’t, add a bit more broth or water.
  4. Cook low and slow: Cover and cook on low for 8 hours (or on high for 4-5 hours). About halfway through, flip the brisket once with tongs for even cooking. It’s ready when a fork slides in with little resistance.
  5. Add the vegetables: About an hour before serving, add the carrot chunks and potato halves to the slow cooker. Nestle them around the brisket. Cover and continue cooking.
  6. Add the cabbage: During the final half hour, add the cabbage wedges. Push them down into the liquid. Don’t stir too much. The cabbage should be tender but still have some bite.
  7. Rest and slice: Carefully remove the brisket using tongs and place it on a cutting board. Tent with foil and let it rest for 10 minutes. Slice against the grain into half-inch thick pieces.
  8. Serve: Arrange the sliced meat on a platter with the vegetables. Spoon some of the cooking liquid over the top. Serve immediately.

Rinse the brisket thoroughly to reduce saltiness. Low and slow is key for tenderness. Add cabbage in the last 30 minutes to avoid mushiness. For deeper flavor, toast peppercorns and mustard seeds before adding. Leftovers taste even better the next day.
