Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Peel, core, and slice the apples into 1/4-inch thick slices. You should have about 6 to 7 cups.
  3. In a large mixing bowl, combine the sliced apples, maple syrup, lemon juice, cinnamon, nutmeg, flour, and salt. Toss until evenly coated. Let sit for 5 to 10 minutes.
  4. In a medium mixing bowl, whisk together the rolled oats, flour, brown sugar, chopped pecans, cinnamon, and salt. Add the cold butter cubes and cut into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces.
  5. Transfer the apple mixture to a greased 9×13-inch baking dish and spread into an even layer. Sprinkle the oat pecan topping evenly over the apples without pressing down.
  6. Place the dish on a baking sheet and bake for 40 to 45 minutes, until the topping is golden brown and the juices are bubbling around the edges. If the topping browns too quickly, tent with foil after 30 minutes.
  7. Let the crisp cool on a wire rack for at least 15 minutes before serving.
