Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 2 ½ cups (312g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup (120g) powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2–3 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat softened butter and granulated sugar together until light and fluffy, about 3-4 minutes on medium speed.
  3. Add room-temperature egg and vanilla extract; beat until fully combined, about 30 seconds.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed until just combined. Do not overmix.
  6. Lightly flour a work surface. Roll dough to ¼-inch thickness. Cut into rounds with a 2-inch cookie cutter or glass. Place on prepared baking sheets, spacing 2 inches apart.
  7. Bake for 8-10 minutes, until edges are just barely golden. Centers should still look pale and soft.
  8. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.
  9. For icing: In a small bowl, whisk together powdered sugar and cocoa powder. Add 2 tablespoons milk and vanilla extract; stir until smooth. Add remaining milk if needed to reach thick glue consistency.
  10. Spoon icing into a piping bag or zip-top bag. Snip a tiny corner. Pipe a small circle in the center of each cookie, then pipe a spiral outward.
  11. While icing is still wet, use a toothpick to drag lines from center outward (like spokes), then from outer edge inward between spokes to create a web pattern. Wipe toothpick clean between cookies.
  12. Let decorated cookies sit at room temperature for about 30 minutes until icing is firm.

Notes

Don’t overbake; cookies continue cooking on hot sheet. Chill dough if sticky. Test icing consistency on one cookie first. Keep toothpick clean between cookies for best web design. Cookies can be stored in an airtight container at room temperature for up to 5 days. Undecorated cookies can be frozen for up to 3 months.
